We use japonica rice that grows in Chishang county from Taitung in Taiwan, where farmers advocate for a sustainable use of the environment and soil. Because we believe that soil can only produce good rice if it is well nourished.

The rice flour is mixed with water and steam-processed into a dough. It is then kneaded, flattened on a conveyor belt and formed into rice crackers.
To turn the moist dough into crispy rice crackers, it must be dried twice, with the first drying reducing the moisture content of the dough by about half.
The rice dough needs a good day’s sleep to achieve a balance of moisture in the rice dough. This step serves to give the rice crackers a balanced mouthfeel.
To minimize moisture in the rice crackers, they are then slow-baked to make them crispy.
Now comes the real highlight: after baking, the rice crackers are refined with a delicious sauce or spices, which gives them their flavour.
